Next, we carefully centrifuge and cold-filter our
ales and lagers. This gentle process removes haze-forming proteins
and yeast, producing a clear, bright beer without affecting flavor,
aroma, or mouthfeel.
Here at Sierra Nevada Brewing Co., we are more than
a little obsessive about the quality of our beers, so we built the
most comprehensive quality control program of any craft brewer in
the country. We start with a detailed analysis of our raw ingredients
and go on to monitor every stage of the brewing process. By the time
an ale or lager leaves our warehouse, we have run over 200 individual
tests, checking everything from pH and dissolved oxygen levels to
bitterness, color, and taste.
